Creative and effusively enthusiastic about food, David Palacios renounced a career as a commercial airline pilot to pursue his culinary passions. David honed his cooking skills training in Maastricht, Netherlands where he developed the gourmet flair to match his creative instincts. David then moved with his family to Andalucía, his father’s home-land, where he grows fresh organic produce and edible flowers for use in his gourmet creations. With a deep knowledge of traditional Andalucía cuisine, David adds a modern twist to the numerous unique dishes he creates for guests at Cortijo Juan Salvador. Chef David quickly gained accolades for his work from such press as The Wall Street Journal, Travel + Leisure and


The menus we serve at the Cortijo are always different and a surprise, we can work around all kinds of restrictions and allergies and our proud to be able to provide a tailored service to all our guests.
